Huevos con Chile Verde y Queso

I came up with a yummy casserole to make use of all the farm fresh eggs we have. It turned our muy delicioso!

Preheat oven to 350 degrees

4 eggs
1 1/2 cup grated cheddar
I can green chile (hot or mild)
8 ounces evaporated milk
1/4 cup corn meal
1/2 tsp salt
Pepper

In a medium bowl combine eggs, milk and corn meal. Add salt and pepper. In the bottom of pregreased 8x8 pan spread green chiles and 1 cup cheese. Pour egg mixture over chiles and cheese and spread remaining cheese. Bake for 25 minutes. Serves 3-4
