Jalapeno Sausage, Potatoes, Eggs and Cheese

Gals,

Here is another casserole I came up with to use those ever popular farm fresh eggs my hens keep laying. We were without eggs for so long and now BLAMMO they are laying again.

Preheat oven to 350 degrees

1 jalapeno kielbasa thinly sliced
6 red skin potatoes (the size of a large egg)
1/2 medium yellow onion chopped
1 Cup grated cheddar
8 oz evaporated milk
2 Tablespoons olive oil
4 large eggs
salt and pepper to taste

Saute onions in a large skillet until soft. Add potatoes and saute until soft. Add kielbasa and cook until warmed through.

In a bowl add eggs, and milk and whisk well. Add grated cheese and salt and pepper.

In an 8x8 pan put sauted onions, potatoes and sausage. Pour over egg, milk and cheese mixture. Put in a preheated oven for 25 minutes. Yummo. Serve with a green salad and you have a complete meal.
